Oil Sardine Rice with Mushroom in Japanese Donabe Pot

- 1 Cup Short Grain Rice Wash and rinse well
- 1 Oz Ginger Julienned
- 1 Cup Dashi Stock Any choice of your favorite soup stock
- 1 Tbsp Soy Sauce
- 1 Tbsp Sake
- 1 Oz Shimeji Mushroom This is optional
- 2 Stalks Green Onion / Chives
- 1 Tin Tiny Tots Sardin in oil
Combine rice, soy sauce, stock, sake in the Donabe pot and soak for 20 minutes
Spread the ginger and half of the green onion over the rice, and place the sardin nicely with the oil in the tin
Cover both lids of donabe, cook over medium high heat for 15 minutes
Turn off the heat and keep the lids on for 20 minutes
Open the lids, sprinkle the rest of the green onions, and fluff the cooked rice
