Equipment

  • Japanese Donabe Pot (1-2 Cup Rice Capacity)

Ingredients

  • 1 Cup Short Grain Rice Wash and rinse well
  • 1 Oz Ginger Julienned
  • 1 Cup Dashi Stock Any choice of your favorite soup stock
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sake
  • 1 Oz Shimeji Mushroom This is optional
  • 2 Stalks Green Onion / Chives
  • 1 Tin Tiny Tots Sardin in oil

Instructions

  • Combine rice, soy sauce, stock, sake in the Donabe pot and soak for 20 minutes
  • Spread the ginger and half of the green onion over the rice, and place the sardin nicely with the oil in the tin
  • Cover both lids of donabe, cook over medium high heat for 15 minutes
  • Turn off the heat and keep the lids on for 20 minutes
  • Open the lids, sprinkle the rest of the green onions, and fluff the cooked rice
